I am jealous. I started my garden way later so I am just now starting to get buds coming up. Course it is colder here, so I can't start it too early.I don't know if I will post about it, but I made an awesome zucchini lasagna. I used thinly sliced zucchini that I roasted int he oven for a few minutes instead of noodles. It was so good and really light. If you have a lot of zucchini you should try it.
Suzy I absolutely want your lasagna recipe! I saw you mention it in one of your posts - I'd love to have it!
I don't know if I will write a post, so I will briefly tell you what I did here. I sliced the zucchini long ways. I don't have a mandolin or anything fancy like that, so my pieces were not uniform, but I don't think it matters. Then I placed them on a baking sheet and threw salt on them and roasted them for maybe 5 minutes at about 400. This was to take some of the water out so the lasagna didn't taste soupy.Then I had ricotta, parmesan, mozzarella and some tomato sauce. I layered the zucchini, sauce, cheese, and repeat. I ran out of zucchini so I did have to do a layer of noodles, but it was okay. It was not too soupy and the zucchini really did make it a light summery dish.That was basically it. Let me know if you have any other questions or if you do it.
